Bioriginal (Saskatoon, Saskatchewan) is introducing a new plant-based thickening agent called XanFlax at this year’s Institution of Food Technologists’ Annual Meeting & Food Expo (IFT). The growing popularity of plant-based, clean-label, and free-from products is creating a demand for innovative functional ingredients that accommodate these claims while maintaining the flavor and texture consumers are accustomed to. XanFlax may be a valuable alternative for common starches used as thickening agents in food and beverage products.
A gluten-free, clean label, and vegan ingredient, XanFlax can be used as a non-GMO replacement for xanthan gum, as well as eggs, guar gum, arabic gum, cornstarch, and flour, without sacrificing flavor and quality, says the firm. XanFlax’s functionality comes from water-soluble polysaccharides derived from flaxseed meal, and contains a favorable nutritional profile as a source of omega-3 alpha-linoleic acid, phytochemicals, and dietary fiber.
