Archer Daniels Midland Co. (ADM; Decatur, IL) unveiled an intense-flavor, rich-color cocoa powder at this week’s Gulfood 2013 event in Dubai. Called deZaan D11SQ cocoa powder, the ingredient is dark red-brown in color and suited for products such as baked goods, cereals, confectionery, and ice cream.
ADM’s deZaan cocoa powders are promoted with a “less is more” pitch as ADM says they offer fuller flavors and lower usage rates than standard cocoa powders. The versatile deZaan range includes an extra black powder and a powder for fermented dairy products.
