Total Nutraceutical Solutions Inc. (TNS; Stevenson, WA) has earned a Canadian patent for the use of ergothioneine as an alternative preservative in foods, beverages, cosmetics, and other products. The company is seeking patents in the United States and EU for similar claims with the ingredient.
Ergothioneine is amino acid produced in high amounts in mushrooms, among a short list of other organisms. TNS claims that while its Organic ErgoD2 ergothioneine slows the rate of product spoilage, it also provides flavor enhancement thanks to Umami properties. The company says its preservative can be an alternative to MSG.
The patent on ergothioneine as a preservative covers a long list of applications, including foods, beverages, cosmetics, medicines, and even petroleum products.
