The sugar in maple sap is the result of starch produced between May and August, which is stored in the tree roots. When the snow begins to melt, the starch turns into sucrose and circulates through the tree in preparation for the growing season. That is why sap runs intermittently between early March through mid-April during the thawing of the ground in the spring.
