FrieslandCampina Ingredients' new Nutri Whey ProHeat product shows promising results with tolerating high temperatures and may be able to assist manufacturers with formulating RTD beverages and other difficult formats.

FrieslandCampina Ingredients recently announced the launch of Nutri-Whey ProHeat, a heat-stable whey protein meant to be utilized in the performance and active nutrition market.1 According to the announcement, the protein’s microparticulation technology will help manufacturers with traditional formulation challenges, such as, viscosity which occurs due to the protein’s sensitivity to heat treatment. This creates challenges when adding the ingredient into ready-to-drink (RTD) beverages. As it is exposed to high temperatures, whey proteins can become denatured and polymerized into gels or aggregates.1
The company explains that Nutri Whey ProHeat uses a patent-pending microparticulation process which consists of a thermal treatment to create stable whey protein aggregates in high heat temperatures. One example of this process is seen in yogurt drinks that have been made with Nutri Whey ProHeat, will contain certain sensory properties such a neutral pH and low viscosity. With this process, manufacturers will be able to create better quality and smooth beverages for performance and active consumers.1
