Pea protein has attracted tremendous hype and market growth in recent years, but its nutty and sometimes bitter taste has proved challenging for formulators. To that end, Glanbia Nutritionals (Fitchburg, WI) reports it has “eliminated the bitter and green notes” from its HarvestPro Pea Protein 83EF.
According to the company, Glanbia’s flavor artistry group was able to achieve a “uniquely clean flavor profile” in its HarvestPro pea protein with its EasyFlav technology. Independent trials of sensory experts at North Carolina State University found that HarvstPro 83EF offered “significantly lower bitter green pea notes than other samples,” according to a press release from Glanbia.
Glanbia believes the more neutral taste in its HarvestPro Pea Protein 83EF makes it ideal for use in bars, cereals, clusters, baked goods, and ready-to-drink beverages, possibly allowing for cleaner chocolate and vanilla flavors.
“With consumers now seeking great tasting vegetarian-based protein with no off-flavor, and with demand for pea protein registering the fastest growth in the category in 2014, we believe our HarvestPro Pea Protein 83EF hits the mark,” says Danielle Black, product manager, Glanbia Nutritionals. “It’s a high-protein vegan ingredient that eliminates the bitter notes that have often limited or restricted new product development.”
HarvestPro Pea Protein 83EF receives its name from the more than 83% protein it contains.
