Fooditive Group (Rotterdam, Netherlands) has announced a new plant-based sweeteners called Keto-Fructose (5-keto-D-fructose) that is derived from apples and pears through an exclusive fermentation process. The ingredient is currently undergoing GRAS (generally recognized as safe) assessment. According to the company, Keto-Fructose closely mimics the flavor profile of sugar, making it a seamless replacement for sugar that can be used in an array of application such as chocolate, baked goods, fruit fillings, glazes, and beverages.

The company adds that Keto-Fructose is sustainable through the utilization of waste side streams from apple and pear processing. This enhances the circular economy, minimizes environmental impact, and allows Fooditive Group to sell it at an attractive price point.
