CitriTex is a new texturizing ingredient that allows companies to replace up to 50% of the oil or fat in bakery products, while maintaining the taste and texture of a full-fat product. Bakery products incorporating CitriTex maintain their moistness and “springiness,” says the supplier. The ingredient was also designed to not require special processing or hydration so that it can be added during the mixing process at any time, without increasing manufacturing costs. It is cost-neutral compared to soybean oil, the company says.
