Danisco has made its entire MicroGard and NovaGard food-protection ingredient lines gluten free, the company announced. Both are now being produced from Sensient’s gluten-free 5001L yeast extract.
The MicroGard line features natural fermentates. NovaGard is a line of antimicrobial blends, which include MicroGard ingredients. Both are part of Danisco’s Care4U range of natural food-protection solutions, which also includes Nisaplin and Natamax natural antimicrobials, Holdbac protective cultures, and Guardian natural extracts.
“Gluten-free products continue taking more shelf space at retail and appearing on more restaurant menus,” says Matthew Hundt, global product manager, MicroGard, cultures division. “The United States has perhaps the largest gluten-free foods market in the world, with annual sales estimated at more than USD 1.5 billion, in a ‘free from’ market worth over USD 3 billion.”
