In light of steadily rising cocoa prices, Comax Flavors (Melville, NY) has developed a range of cocoa “extenders” and replacers that the company says can replace between 10 to 75 parts of dutched cocoa in a finished product with one part of Comax flavoring.
The extenders and replacers are available in both powdered and liquid form. The company says that flavor results can range from a rich chocolate taste with deep, complex notes, to a light, caramel-type flavor.
Comax adds that the customized flavors take into consideration both the type of cocoa and the total percentage of cocoa in a product, and that there are natural and artificial options available.
